500 Cupcakes: PB & Banana Cupcakes

YUM! This is my 2nd favorite recipe (so far, there are 500 after all) from 500 Cupcakes:

You'll need:
1 cup (two sticks) sweet butter, softened
1 cup superfine sugar (though I used normal Domino)
2 cups self-rising flour (I used all-purpose)
1 tsp. baking powder
4 eggs
1 tsp vanilla extract
2 tsp cinnamon
3 tbsp. ground almonds (I omitted this because I don't like nuts)
4 tbsp peanut butter
1 cup mashed bananas (about 2)

1 cup cream cheese, softened
1 1/2 cup confectioners' sugar (powdered sugar)
1 tbsp lemon juice
1 tsp vanilla extract
1/2 cup mashed banana

Preheat the oven to 350 degrees. Place 24 paper baking cups in muffin pans (I can usually stretch the recipe to make more) Combine the butter, sugar, flour, baking powder, eggs, almonds, vanilla and cinnamon in a large bowl and beat with an electric mixer until smooth and pale, about 2-3 minutes. Stir in the peanut butter and mashed bananas. Spoon batter into cups and bake for 20 minutes. Remove and cool.

To make frosting, beat the cream cheese and confectioners' sugar in a medium bowl with an electric mixer until soft and light. Add the lemon juice, vanilla and mashed bananas. Beat until well combined. Spoon over cupcakes.

And enjoy!

Next up I'm going to try key lime cupcakes. And by the way, has anyone tried any of the other 500 line of books (cookies, pies & tarts, appetizers, soups, etc.?) Are they as good as 500 cupcakes?

Live well!
