100 cal Pumpkin Spice Muffins




As soon as September hits, I'm in Autumn mode, I don't care what the temperature hits. And fall to me means pumpkin. Pumpkin everything. Which I love.

So I totally winged this recipe this afternoon and surprised myself when it worked. And by worked I mean these muffins are delish!

Not only are they delicious, they are only 100 calories EACH. So, help yourself to seconds. Oh, and did I mention? There are only THREE ingredients!

Ingredients:
1 can of pure pumpkin (small, 15 oz)
1 egg (OPTIONAL!)
1 box of spice cake mix

Let's get to baking:
Preheat oven to 325. Line muffin pan with muffin liners. Combine the three ingredients well and distribute into pan (I got 18 muffins out of the recipe.) You can sprinkle a little more cinnamon and sugar on top before baking if you'd like. Bake for 15-20 minutes.

Yes, that's it. Easiest recipe EVER. You could even add cream cheese frosting and turn them into semi-healthy cupcakes.
